Error: Cellular plan can’t be set up, eSIM installation is unsupported on your device.

I am using iPhone 12 Pro, and have been using an eSIM from AT&T since I activated my phone last year. 2 days ago, out of the blue, I started getting "SIM Failure" popups and "Invalid SIM" in the status bar. AT&T shipped me a new QR code for the eSIM, but when I scanned it from the camera, I get the following error:

"Cellular plan can’t be set up, eSIM installation is unsupported on your device. " (see attached picture)

As expected, AT&T is clueless on what the issue is.

I've seen sporadic mentions of this error on these discussion forums, and they always have a post from an Apple expert to this page:

If Dual SIM with an eSIM isn't working on your iPhone

I've gone through this Apple Support page multiple times, and since my phone was working just fine a few days ago, nothing in the page stands out as to what the fix could be.

I couldn't determine if anyone has actually solved this error - can someone post what they did to resolve it?

Many Thanks!

That article ends with:

Still need help?

If you still can't set up or use the Dual SIM features of your iPhone, contact Apple Support

Which is where this is seemingly headed. Use that blue-text link, and discuss this with the folks at Apple.
