Also you use finder to sync. Use the Finder to sync your iPhone, iPad, or iPod with your computer - Apple Support.

You don’t. There is no iTunes for Big Sur, but you don’t need it.

Anything iTunes did before, can be done in Big Sur, through either the Music App, TV App, or Finder.

Why do you need iTunes exactly?
