I can't seem to do any audio recording in Logic Pro X. Using MacBook Pro 13in 2017; Catalina 10.15.7; Logic Pro X 10.5. Microphone is enabled for Logic in security preferences. Garageband detects and records audio through Samson Meteor Mic and Built-in Mic, Logic Pro X will not record through either.

Once you did the check that your audio sources are working in a different application like GarageBand, then Logic should receive that input signal too. They both rely on Core Audio.
As Don Mactavish already mentioned, make sure that the proper Audio Device is selected in the Logic Preferences > Audio > Devices > Input Device, and also make sure that the Core Audio checkbox is enabled.
Once that is correct, select the Input from the Input Slot on the corresponding Audio Channel Strip in your Mixer Window.

Have you selected the source in:
Logic Pro : Preferences : Audio Input Source
Also LPX is at version 10.6.2 and you may be running into a issue with OSX 10.15.7 so I suggest updating LPX if you can.
