Some applications won't allow me to delete them, such as TextEdit, FontBook, and other things I don't really use. How do I delete them?

IF you were ultimately able to remove some of the built-in Apps, it could present problems later in keeping your Mac properly updated.
I recommend you simply ignore the built-in Apps you do not use. The amount of space they consume is not very large.
If you wish, you can remove an Icon from the Dock by dragging it off the Dock and onto the desktop. It should go "poof" and disappear.
Some applications are part of the operating system and can not be independently deleted.
