Does iOS allow 3rd party apps like mobile games to use Bluetooth headset mic for voice when it’s connected?
Or is it (audio in) defaulted to phone’s built-in microphone?

As long as your bluetooth headset mic works and is connected to your iPhone that the game is being played on then the mic through the bluetooth headset will be used primarily.
