I just upgraded from iPhone X to iPhone 11. I don’t want my photos seen when I mail out my old iPhone. How do I prevent this?

I just upgraded from iPhone X to iPhone 11. I did it online. How do I prevent the next user from seeing my photos from my old iPhone X, when I mail it in?
