My phone is stuck in guided access. I'm trying to use find my iphone App by putting iphone12 pro as lost in the find my iphone app to restart my cellphone. How do I disable my guided access without a passcode?

We'd be happy to provide some information regarding guided access. In order to end it, you can triple slide the side or home button, enter your passcode than tap end or use Touch ID/Face ID by double-clicking the Side or home button.
If the password is unknown or forgotten and you have a passcode set on your iPhone, you can force your iPhone to restart and then enter your device password.
