Just got my Apple Watch and they helped me set it up in the Apple Store. I can’t figure out now how to change (or adjust) the green exercise time selection after the fact…I’m technologically challenged (old lady!) and cannot figure it out

Open the activity app,scroll down to the bottom and tap on change goals;
