I have a Mac 27" iMac late 2014. I have been told that I can not use this as my monitor foe the Mac mini What about older iMacs?
Most any display that supports USB-C or HDMI will work with the latest Intel and M1 Mac Mini's.

No Mac's built after 2019 can use an older supported iMac as a display in Target Display Mode.
No because the 2020 M1 Mac Mini does not support using your 2012 iMac as a display.

Without knowing your budget and whether you want FHD (1920x1080), QHD (2560x1440), or UHD (3840x2160) and what your typical use is, it is difficult to give you any suggestions other than generalities.
