Apple One Premier on MacOS Catalina

I currently have four family members with iphones on iOS14, iPads on iPadOS 14 and Macs on Catalina (not BigSur). We subscribe and family share Arcade, TV and News.

I wanted to upgrade to Apple One Premier today and the Apple website said I needed a Mac with BigSur or iOS/iPadOS 14 to initiate the upgrade. I contacted Apple support and asked if that meant that upgrading via iOS or iPadOS 14 would cause all our Macs (Catalina) to lose access to all of our Apple services until we upgrade to BigSur. The support person told me that is correct!

Can this possibly be true, that no services will work with Catalina Macs if you upgrade to Apple One?

I'm asking here because it doesn't seem that this can be correct info.

I haven't personally tried this but it comes directly from an Apple document. See below from Apple One - Apple

Which device and operating system do I need?

Apple One services work across your Apple devices, including iPhone and iPod touch with iOS 14 or later, iPad with iPadOS 14 or later, Apple TV with tvOS 14 or later, and Mac with macOS Big Sur 11.1 or later. If you subscribe through another device, you can still enjoy Apple One on any version of macOS earlier than macOS Big Sur. Apple Fitness+, included with the Apple One Premier plan, requires Apple Watch Series 3 or later.

Yes, the Apple Support person was mistaken. The support document does state you can enjoy it from macOS versions earlier that Big Sur, but you apparently can start the Apple one subscription from anything but Big Sur.
