Depends on how much data you have to migrate from the old to the new iMac.
Most times it's best to just patiently wait it out, instead of interfering or interrupting the Migration.
Turns out that the problem was that, even though I had both old and new Macs connected with an ethernet cable and put "ethernet" at the top of the list, Migration Assistant kept turning on my wifi, which is too slow to do the transfer. This happened even after I set wifi to "off" for both old and new computers. Migration Assistant on--wifi on.
I had to wait until the very last step, then unplug my router. This left me without VOIP phone service for several hours, but did allow the transfer to happen. What a pain!
