How can I get my storage back down ?

You’re likely headed for a replacement iPhone with storage that better meets your needs. If this is a 16 GB model, those are seldom not storage-constrained. Pending any potential future replacement, back up, reset to factory, and restore the backup, amd enable and use whatever storage optimization recommendations and off-loading might be available. But a too-small storage configuration usually means ongoing management, as the requirements for apps and data and iOS all tend to increase.
