How do I check which devices have AppleCare?

On the device itself, go to Settings>General>About. If the device has Apple Care coverage, it will show in that window about half way down on the screen.
Or go here, enter the serial number and you can see the coverage that you have for the device.

You can copy the serial number from Settings>General>About>Serial Number.
How can I see how it is being paid for, I have a charge for AppleCare on my credit card and thought I had paid the 2 year upfront. Not sure which device, so how can I see?
