In search of: replacement audio recording and editing software. Ambrosia's Wiretap no longer supported (post Mac OS 10.14 )

WireTap Pro and later WireTap Studio were brilliant, simple, intuitive audio recording applications made by Ambrosia Software and I'm wondering if any of the old users have found a similar replacement? 

I know people have asked in this forum before but I haven't seen any brilliant responses. The app needs to be able to: record whatever audio is on the computer; enable various levels of recording quality (eg at least high AIFF, medium or low mp3 quality); enable easy editing via a zoomable waveform; and easy export to iTunes. 

Not looking for pro music recording and composition or complicated multi channel editing. Has to suit Catalina or later OS.  App store has lots of apps, most with zero or only a couple of reviews. Love to hear from you.
