Just bought a new SE 2020, started installing iOS and it is has been lasting almost an hour.
what can I do?

Often it depends on your wifi network reliability/stability/speed AND on quantity of apps/data/media on your device. Sometimes it depends also on the old iOS version that was installed on the device (before updating it).

My suggestion is: be patient and wait.
I had that problem some years ago updating an iPhone 6 (using iOS 10) to iOS 11. It took almost 3 hours, but it was successful.

Wifi is ok. should I wait for some more time or can I restart the device in this case?
