Look in your email provider's website for email settings for email clients. They usually list all the information you need to setup the account including the incoming and outgoing mail servers.

Unless it is a provider that is way out of the mainstream, the phone can usually figure this out. Go to Settings/Mail/Accounts and tap Add Account. Enter your email address and follow the instructions. You will only need to know the incoming (and outgoing) server URLs if the Add Account can’t figure it out.
