When setting up my new phone, I missed the option to restore my icloud backup, I guess. Everything else is setup but none of my apps, etc. How can I restore my old icloud since the "setup process" is now complete?

You’ll need to erase the iPhone from settings > general > Reset > Erase all Content and Settings. Then you’ll go through set up again so you can choose that iCloud backup.
