Emails on iPhone 12 disappeared

When you add an email account to your device, you are setting up a method by which you can interact with the account you hold with your email service provider, which is where the messages and folders actually exist. Have you checked with those email providers directly to see if the changes you see on your iPhone are reflected at their websites, including checking the deleted folders there? Those providers may also offer methods by which your email accounts can be restored to a prior point, and we would advise checking there next if the websites do not offer a resolution.
