USB-C to USB Adapter

Can I use this adapter to move photos straight from pro max 12 or iPad Pro to a flash drive?

You provide no details at all as to the adapter that you propose to use.

Your iPhone has a Lightning connector - whereas the 2018/2020/2021 models of iPad Pro have a USB-C connector. I surmise that your “flash drive” has a USB Type-A connector?

For your iPhone, to connect a USB storage device, you will require an Apple Lightning to USB 3 Camera Adapter:

An iPad with a USB-C port will require connection of a USB hub - such as an Apple USB-C Digital AV Multiport Adapter:

Other third-party USB hubs are available. Use of a USB-C to USB plug adapter is not recommended - as the USB-C standard does not include “USB adapters” within its specification. USB adapters can create non-standard interconnection that can in some cases cause damage to connected devices.

As such, given the high cost of iPad and iPhone, you would be well advised to only use MFI Approved (Made for iPhone/iPad) adapters or hubs.
