I use a Canon MX870 multifunction printer/fax/scanner. I’ve had no issue using it with a series of Android phones. Now that I have switched to an iPhone 12 Pro Max, I seem to be unable to connect to the printer with any usual tool.

Canon PIXMA MX870 does not appear to be an AirPrint (About AirPrint - Apple Support) model.
This means that you will need a special app from the printer manufacturer in order to print from an iPhone. At least according to the following web pages, Canon PRINT Inkjet/SELPHY seems to be compatible with an MX870.
