Unless you are a suspect in a crime the police are not going to be listening to your conversations. Don't do anything illegal or hang out with people doing illegal things and you should have nothing to worry about.
Ask them. There are no tools in macOS to determine if your phone conversations are being monitored, and this question is out of scope for the support community as it is not something we can help you solve.
Commit a crime, you'll find out. (jokes)
This is a legal question and can differ based on jurisdiction. For example, GDPR jurisdictions may require law enforcement to disclose such things.
But yes, legal, not technical question.

Just in Case:
Be cautious of what you speak of, and you'd be fine from here.
Why, do you think you are such an interesting person the cops have time to listen to your conversations.
And if you are paranoid enough to wonder if the cops are listening in, what on earth have you been up to.
It is more difficult to tap a cell phone call than it is to tap a landline call. Unless you have done something seriously bad, for example, you were part of the January 6 Insurrection, are on a terrorist watchlist, are suspected of a multimillion-dollar white-collar crime, it is highly unlikely that the police are monitoring your calls.
If you think there is a realistic chance of that, you have bigger problems than can be solved in a support forum.
