Resetting new phone
How do you start new iPhone from the beginning so I can have my old thing from my old phone so I can transfer to new phone

If you want to clear the new phone and start again with Quick Start then on the new phone go:
Settings, General, Reset, Erase all content and settings.
This will wipe everything off forever, and you will need the AppleID Password that was used to activate it.
When you go from the Hello Screen on the new one, if you keep the old phone powered up and next to it on the table you will be offered the Quick Start transfer option.
