When using the fitness app, if I do a run and do this through Apple fitness and also do the same run through map my run which data will pull through to close my rings or will they just work it out

Health tells you where the data comes from. You can always delete duplicate data, though it's pretty good at not doing that. I suggest that you try it out and see how it works.
It should work. I've certainly used more than one at a time.
