We're upgrading from an iPhone 6 to an iPhone 7.
We manually set up the new phone from an iTunes backup, but this process did not transfer the number over—the new phone says "no service". What do we need to do to move the number over?

You need to put the active SIM into the iPhone 7. My guess is that is still in the iPhone 6.

Answer: call the carrier. Turns out in our case, when we moved an old number off of the iPhone 7, it bricked the SIM card, so we need a new one.
Glad to hear that you worked it out. I'm surprised the carrier did not explain that to you, but then anyone can forget something sometime.
