How do I successfully transfer all of my programs and data from a 2011 MacAir with OS High Sierra to a new MacAir (2021)?

What to Do:
Back up your current Mac, and then retrieve it all on the new Mac through use of Migration Assistant.

I cannot install the latest OS, because I have a 2011 era MacAir; my OS is High Sierra, but it cannot install anything later. I have purchased a new Mac Air. How do I transfer data?
