How to I type the vertical bar (pipe sign) with a Canadian French Mac keyboard
I searched everywhere, tried option +/- or option 7 like some older posts suggested, no luck.

Have you tried using the keyboard viewer to find it?
Go to System Preferences > Keyboard and check the box to Show keyboard and emoji viewer in menu bar.
Then click the keyboard viewer in the menu bar.
Now, as you press the modifier keys on your keyboard (shift, command, option, control and fn) the keyboard viewer will change and display different alternate symbols available for each key.
