Not sure if I should use the new phone SIM card or transfer SIM from old phone (One Plus 6T on T-Mobile)

The old SIM cards will work however will not be able to provide 5G. You may get up to 4G LTE from T-Mobile. T-Mobile has 5G service and they will ask you to go to their store and get a new 5G SIM Card.

If the new SIM card is activated you can use it. When you turn on the phone if it shows a carrier and network, and your phone number is correct just use it. If not use the old SIM card.
