Is anyone else having this issue?:

I haven't made any changes to my settings of view and all that. Don't know what it's changed all of a sudden. This issue is not occurring on Firefox. My Mac mini is giving me the issue. Usually (and always) it's been white. Today is is all dark.

Most likely you have dark mode on your mac, and google sees that and adjusted to dark mode.

See:

How to use Dark Mode on your Mac - Apple Support

Safari. When you use Dark Mode, Safari automatically shows a website in Dark Mode if the website has been designed to support it. If the website doesn't support Dark Mode, you can use Safari Reader to read articles in Dark Mode.

You should be able to turn it off by pressing the settings icon
