Unlinking data between phones on the same account

My old iPhone 7 is being given to a family member and I have setup the Apple ID and email account. How do I make sure that our data is not linked so they don't see my emails, contacts, photos, etc. and I don't see theirs?

Son’s apple ID i gave my old ipad to my son. logged out my apple id, logged in with his Apple ID (he already has an iPod with photos and messages on). reset and deleted data. but photos, messages and emails are still all showing mine, not his. How do i delete my data and sync to his? I have family sharing activated.
