Apple Event: May 7th at 7 am PT
The Australian Public Holidays macOS Apple subscription calendar has the Grand Final Friday public holiday listed on the wrong date. It should be 25/09/21 but is 01/10/21. This is messing with my calendar. How do I go about changing this, or requesting a change to this?

Personally, I would dump Apple's calendars. If yours is like the US one full of useless entries, just make your own. I only need the holidays I am off work. You can create it on iCloud and share it out so all of your devices can access it.
Most holidays are simple to enter as repeating events. There are some that don't follow calendar increments, so those would require manually entering each year.
