I updated to this and my Desktop and all files disappeared - HELP!!

How to find them again?

iMac 27″, macOS 11.5

It doesn’t tell you to turn it on. It defaults to on and you have to turn it off.

I don’t know of any other reason they would be gone.

If you Go > Documents, does it open a folder with your documents?

Look in iCloud Drive.

The startup assistant will tell you it is going to turn it on unless you disable it.
