A Demo Update for what?

What exactly are you updating? If you cannot update because it cannot connect to a server, then be certain you have a strong Wi-Fi signal. If this is of no success, then try using a computer. Go Here: Update your iPhone Using a Computer - User Tip

As a Last Resort...

Reset to Factory Settings:

One thing to consider is to restore the iPhone to factory settings. Use of this Link: Restore your iPhone, iPad, or iPod to Factory Settings - Apple Support. Important - back up first, as mentioned in that link.

Important:

On the iPhone Both Before and After the Reset:

Enable different iCloud settings on your iPhone, so that all is restorable, after the reset...

  1. Go to: Settings
  2. Tap: Your Name (Top Item)
  3. Tap: iCloud
  4. Tap: Contacts (so that it is green in-color

Thank you for the screenshot.

Cellular is Enabled:

Looking on the top-left of the screenshot, I can see that your iPhone has Cellular enabled. Are use able to disconnect from Cellular, and use WiFi, instead? If not, you may need to factory reset. So, only an iPhone with 5G can update over cellular. Do you have 5G? So, either use 5G to update your iPhone, or disable Cellular updating it using a computer.

Two User Tips:
