How can I safely save data, wipe clean and update operating system on my MacBook Pro 13’ mid 2012

2.9 GHZ

dual-core intel core i7

8GB 1600 MHZ DDR3

intel HD Graphics 4000 1536 MB

and which operating system will help it to run smoothly, I currently have Catalina on it and I already transferred all my folders etc but I excluded system files and applications, I don’t want any junk I want a fresh computer to use as a second computer I just got a new MacBook pro 2020.

What to do before you sell, give away, or trade in your Mac ...

Catalina is the end of the line for a mid 2012— you back up and save data like any other—Time Machine, Boot clone, etc on an external drive...

The most trouble free way to move to a new machine, is using the Setup Assistant on the initial boot of a brand new machine— you have one shot here. https://support.apple.com/en-us/HT205749

If that opportunity has past, the second best way is use the Migration Assistant.
