I'm taking my iPhone 8 plus into Apple today for a water damage repair, but I had taken out the sim card and sim card holder so the sim card doesn't absorb the water. I don't know where I placed them, so if I don't take the sim card and sim card holder to Apple, will they still be able to repair the phone?

Apple does not repair liquid-damaged iPhones. They will only offer you the option to replace it.

Yes, that is correct; however, in the off-chance that the Apple technician can make a repair, you should take them along with you. Most likely, they won't need it.
