Where can I find software and a manual for this thing?

If a firmware update is available for the AirPort........(it has been years since Apple offered an update.......an update button will appear when you open AirPort Utility and click on the AirPort. Click the Update button to install the latest version of firmware on the AriPort Extreme.
If you don't see an Update button, then the AirPort already has the latest version of firmware installed.
