I am beginning a new online grad program, and I need to keep my files in a class file organized by week. I am trying to figure out how to subdivide files. I am using a MacBook Air 2020 running macOS Big Sur 11.5.1. I looked some older posts and they said to open the file and click new file, but I am unable to find anything like new file within the class file I created.

Do you mean a folder?
You can create as many folders as you like... In the Finder, create as many folders as you need, in a neat hierarchy.

A file is e.g a document. A folder is like a box in which you keep (store) some files
