Does the "more space" scaled resolution impact the performance of the m1 MacBook Air
hi, I was wondering how badly effected the MacBook would become or if there are any other negatives of using this option.

No. It has no impact on the performance of the Mac. But, being an accessibility, it is intended to increase your performance. So, all is fine.
