I want to enhance my 100 meter running time , is there a way to configure Apple Watch to end the running workout directly at the end of 100 meter for better measuring timing ?

No, I'm afraid not. I don't think the distance would be measured that accurately anyway. Here is what you can do. In a workout, tap the circle with the 3 dots in the upper right corner to set/unset workout goals.

You may then actually have to perform a workout for the "new" goal to stick.
