I am a quadriplegic (I can’t use my hands) I can use Siri to make a call but I have no way to put the call on speaker. Any ideas?

Yes. you should be able to change it:

Go to Settings > General > Accessibility

Scroll down to Call Audio Routing

Change it to Speaker

Within this same settings panel, you can have it automatically route to your Bluetooth headset (if connected), on speakerphone, or have it automatically decide. You even have an option to have your iPhone automatically answer calls for you.
