How do I keep my dock on my MacBook Pro instead of it moving to the iPad while using sidecar?

I'm not sure what you are seeing. I tested Sidecar with "Displays have separate Spaces" checked and unchecked, logging out between tests and the results were the same. If the Menu Bar is set to display on the iPad, starting and stopping Sidecar, the Menu Bar shows on the iPad. If the Menu Bar is set to display on the MBPro, then it stays there starting and stopping Sidecar.
If you are displaying the Sidecar Sidebar then if the Dock is on the MBPro, I could move it to the iPad with the 2nd button down on the Sidebar "Show or hide your computer's Dock on your iPad." See "Use your iPad as a second display for your Mac with Sidecar". If the Menu Bar was set to display on the iPad already then the "Dock button" did nothing as the Dock was already on the iPad.
So for me, the "Displays have separate Spaces" checkbox did nothing. Checked or unchecked, the Mac was remembering the last used Menu Bar setting and would move the Menu Bar and Dock to the iPad with Sidecar if it was set that way the last time Sidecar was used.
Setting the Menu Bar to display on the MBPro, it remembered that as well and next time I activated Sidecar, the Menu Bar and Dock stayed there. I didn't have to keep going to the Displays Arrangement Tab and keep moving it back.
Am I missing something?

To keep your Dock on your MacBook Pro while using Sidecar there are two solutions.
Move the main menu bar to the MBPro in System Preferences > Displays > Arrangement.
Click and hold on the little menu bar in the Arrangement window and move it to the MBPro.
2. If you keep your Dock on the side, move it to the opposite side of your iPad. If your iPad is on the right as above, put the Dock on the left.

My Bad, I didn't know you were using a Pad instead of a Mac and also your setting to mirror instead of extending.
For others asking the same scenario on a "Mac with a 2nd Display via HDMI or C connector,) my suggestion worked great. Again My Bad... I don't have an Ipad so I couldn't help there nor test. Hope you find an answer. Best Wishes.
I am not sure, why everyone keeps it so complicated.
there is only one simple solution to keep your dock bar from following you. in Multiple monitors Apple considers them as separate spaces that is why the dock bar follows you. To prevent this simply go to:
1.- System Preferences then,
2.' Mission Control and uncheck "Display have separate spaces'
3.- Log out
4.- Log back in
and that's it.. your taskbar won't follow you now.
That's it simple.
So please stop giving the wrong information.
