For work I'm using a PC, i.e. Windows. I bought the Magic Keyboard to use with that PC. Have been able to connect and they keyboard works nicely, as long as I have logged in with the old windows keyboard... Can't find a way to log on with the magic keyboard.
So question is - how can I enter that increadibly vital Ctrl+Alt+Del command with the magic keyboard?

For me the combination of Option + Control +
works!
For the on-screen keyboard, I can get it visible with Ctrl+Cmd+O but only when being logged on, not being able to get anything happening in log-in screen.

Yes, it is possible that custom settings have been used to suppress the ease of access button. See https://www.zubairalexander.com/blog/remove-ease-of-access-button-in-windows-10/ for example.
Ctrl+Cmd+O should turn the On-Screen Keyboard on or off. I'm currently connected to a Windows 10 desktop remotely from a Mac and can bring up the keyboard. I can then hold Ctrl+Alt on my Magic Keyboard and click Del on the On Screen Keyboard and I get the standard options to lock the computer, run task manager, etc.

There is absolutely nothing to click on with the mouse 🤔 Right click gives nothing.
Can it be that corporate settings are complicating things? I have never used a Windows PC privately, maybe there are more options on a “normal” log-in screen…?
Try Fn+Control+Option+Delete. Another approach is to enable the on-screen-keyboard.
