If I uptate my computer with the new macOS, does it still affect the the use of Inkscape? I did an updated my mac last year and I had to go back and remove it because I couldn't use Inkscape properly.

According to the website, Inkscape 1.1 supports 10.11 - 10.15.

You could contact them to see if the development version supports Big Sur 11.0.
Inkscape 1.1 installed on Big Sur 11.5.2 is only an X86_64 application. It will run, but the behavior is off, and may not be ready for Big Sur yet.
