iphone backup override

Hi!

I've tried to set up my new iPhone, which is usually no problem at all. For some reason Whatsapp, couldn't install. In a weird brainwave I tried to make space in my storage and remove some useless screenshots (400 of them), but I accidentally removed all my videos as well. I didn't realize it until I already override my backup.

I tried to connect iPhone to my Mac, but could't find an older backup. I've looked on iCloud.com, couldn't find anything as well. I have two iPhones running on the same backup now.

Does anyone know if I could somehow retrieve an older backup from three days ago? Or is everything gone?
