Buy music
I cannot buy an album in Apple Music on my iMac not my iPhone. It only gives me the option of subscribing to Apple Music which I do not want to do

You can purchase music through the iTunes store. It's not possible to do so through the Apple Music app. Once music is purchased through iTunes you will be able to play it through the Music app.
