scanner with Mac mini

I have a similar Perfection Series scanner. You will need to download and install the Epson Scan 2 driver for this to work with Big Sur. Epson has posted Mac OS 11 support advisories online with an FAQ: https://epson.com/faq/SPT_BIGSUR-NS~faq-0000cf7-macos_11?faq_cat=faq-topFaqs

Here is the support page for your scanner (550). If you click downloads, it provides Big Sur and Catalina instructions.
