I've checked the Epson site, and they do offer a driver that's compatible with MacOS 14, so you should only have to download the driver and follow the installation instructions for it. The driver can be found here: Epson V600 Driver
You'll need a USB A to USB C adaptor in order to connect it to your MacBook. This one is available from Apple: Apple USB A to USB C adaptor

I already have the driver downloaded on my iMac, which is old. I’ve been using the Epson scanner for a few years with no problems. I just needed to figure out the correct adapter for a new laptop, so big thank you!
You need the current Epson V600 drivers installed before you bother to connect this scanner. Don't install anything from media provided by Epson with the scanner. If the scanner only provides a USB-A connector, then you will need Apple's USB-C to USB Adapter - Apple to connect to your USB-C ports on the MacBook Air.
So many users have had issues with this scanner and Epson drivers across multiple versions of macOS that you might be better served to return the scanner if recently purchased and choose another such as Epson (v700, 800, or 850) though they are either discontinued or more expensive. Then, instead of Epson drivers and software, use the paid, but free trial of VueScan Professional which supports the parenthetical Epson scanners without any other software necessary.
VueScan Professional does not support the V600 scanner without working Epson drivers.
