To be honest, this issue started maybe as far back as a year (more?) - but no matter which music track I select, the alarm always plays radar.
And yes, the track is downloaded on my phone from Apple Music and I'm selecting the same track. I've tried different songs and it's the same thing.
I'm running iOS 14.7.1 on an iPhone 12.

Is this happening on the same alarm, or have you tried to create other alarms and the same thing happens?
Follow the steps here in How to set and manage alarms on your iPhone. Create a new alarm and test it out. If that does not work, edit the alarm you have and see if you are able to do it that way.
Are you able to change your ringtones? Test out the ringtones to see if it is doing the same thing with that as well: Use tones and ringtones with your iPhone, iPad, or iPod touch
After you have tried those steps, Restart your iPhone. Refreshing the iPhone components after making changes can help when the changes are not applying as expected.
