When I try to scan with my Epson Workforce 520, I get a message "Scanner is in use by another application". I only have one computer linked to my scanner/printer. Any thoughts please?

Boot into Safe Mode according to Start up your Mac in safe mode - Apple Support and try to scan from there. Reboot normally and try again.
NOTE: Safe Mode boot can take up to 10 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
This is the Epson support page for Big Sur, check that you have the latest drivers.
Assuming you have the latest drivers etc, I would contact Epson Support (562) 276-4382 to be sure that you should be able to scan given your setup
If you need to scan ASAP, try using Image Capture from your applications folder.
