The first thing I would do is update your macOS software to the current release macOS 11.5.2
Update macOS on Mac - Apple Support
and test your results.

2021.08.27 - Macbook M1 Bluetooth, with macOS Big Sur Version 11.5.1, does not show the Sony WH1000xm3 device for pairing.
