You cannot change the color or the font for the Home Screen apps and folders of your iPhone. Apple is yet to release such an update for iOS. However, you can try to set a different wallpaper in order to change its color.

A dark wallpaper will change the font color to white while a light, colorful wallpaper will change the font color to black.
